Oatmeal Raisin Cookies

Ingredients :
  • 2/3 cup granulated sugar
  • 2/3 cup packed brown sugar
  • 1/2 cup butter or margarine -- softened
  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons vanilla
  • 3 cups quick-cooking or old-fashioned oats
  • 1 cup all-purpose flour
  • 2/3 cup raisins
Directions :
  1. Heat oven to 375º.
  2. Mix all ingredients except the flour, oats and raisins by hand in a large bowl.
  3. When well mixed, stir in raisins, flour and oats.
  4. Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
  5. Bake 9 to 11 minutes or until light brown.
