- 2 cucumbers (halved lengthwise and thinly sliced)
- 1 Bombay onion (halved and thinly sliced)
- 1/2 cup mint leaves
- A handful coriander leaves
- 5–6 cili padi (sliced)
Dressing :
- 1/4 cup rice wine vinegar
- 1/4 cup castor sugar
- 1/2 tsp salt or to taste
- 3–4 Tbsp water
Garnishing :
- Some grilled chicken sausages (sliced)
Directions :
- Combine the dressing ingredients in a bowl. Stir well until sugar dissolves.
- Put the cucumber, onion and cili padi in a large mixing bowl. Add the dressing ingredients and toss well to mix.
- Let it sit for 10–15 minutes. Add the mint and coriander leaves to mix.
- Dish out and serve with the sausage as an accompaniment immediately.
