冰箱保鮮五招

身處熱帶,家家戶戶的冰箱使用率向來很高,但要提高冰箱的保鮮效果卻大有講究.

  1. 冰箱宜放在通風的地方,與周壁的距離不少於10厘米,以利散熱,從而增加冰箱的製冷能力.
  2. 放進冰箱裡的食品應盡量新鮮乾淨,質量好的食品微生物基數少,可減少繁殖後的微生物總數,且不易污染貯存在冰箱中的其他食物.
  3. 冷飲等直接入口食品應放在冷凍室上層,凍魚、凍肉放在下層,以防交叉污染。冷藏室的溫度上面低下面高,魚、肉等動物性食品宜放在上面,水果、蔬菜等放在下面,讓它們在適宜的溫度環境中“各就各位”.
  4. 放在冰箱裡的食品都應有一定的包裝(包括保鮮膜覆蓋),其作用是防止食品冷凍乾燥、串味、相互污染,還可減少化霜次數。需冷凍的魚、肉,應按家庭一次食用量的大小包裝,防止大塊食品多次解凍而影響其營養價值及鮮味,同時也可省電.
  5. 普通冰箱要定期融(自動除霜冰箱除外),擦洗,最好用二氧化氯消毒劑再擦洗一遍.

Sauteed Chicken Supreme With Dried Chillies

Ingredients :
  • 500 grammes of chicken supreme (the most tender part of chicken breast which is longish in shape, slice it to cubes / thick diagonal slices)
  • 20 dried chillis (pre-soaked for 30 minutes, seeded and cut into halves)
  • 5 cloves garlic (chopped)
  • 4 tablespoons of cooking oil
Marinade :
  • 1 tablespoon chinese cooking wine
  • 1 tablespoon dark soya sauce
  • 2 tablespoon corn flour
Seasoning :
  • 2 tablespoon chinese cooking wine
  • 3 tablespoons of sugar
  • 1 teaspoon of sesame oil
  • 1 tablespoon white vinegar (or squeeze approximately 10 limes or more for juice)
  • 1 teaspoon of cornflour
  • 1/2 tablespoon of light soya sauce
  • 1 tablespoon of water
Directions :
  1. Pound meat slightly with blunt side of knife or tenderiser. Marinade for 30 minutes.
  2. Heat oil in wok, fry the dried chilli for 30 seconds and then add the garlic. Continue to stir-fry till garlic begin to brown. Add chicken and fry till cooked (if you wish to add cashew nuts, add them now). Then add seasoning, stir well until evenly distributed and gravy dries up.
  3. Serve hot with steamed white rice.

Stir-Fried Ridge Gourd (Kak Kue) With Eggs And Prawns

Ingredients :
  • 2 pieces of ridge gourd (prepared as indicated above)
  • 2 large eggs
  • Small or medium sized prawns (about 1/2 cup, shelled)
  • 3 cloves garlic (chopped finely)
  • Warm water (to keep moist)
  • 1 1/2 tablespoons cooking oil (palm oil preferred)

Seasoning :

  • Salt to taste
  • 2 teaspoons light soya sauce
  • A couple of dashes of white pepper powder
  • A pinch of MSG (optional)
Directions :
  1. Heat oil in wok. Add garlic and prawns and stir fry for 30 seconds. Add eggs and lightly break them as they are frying. Before eggs become completely fried / dried up, add ridge gourd and coat the ridge gourd slightly with whatever uncooked eggs remaining.
  2. Stir well and add seasoning. Sprinkle some water to keep moist. Don’t overdo on the water as the ridge gourd will ooze out much water during the cooking process. (I overdid it and the dish was semi-floating just like the picture above.) Cover with lid and stir every 30 seconds or so.
  3. Cook till ridge gourd has turned green and soft enough to your liking. Serve hot with white rice.

Mixed Vegetables Using Cabbage, Carrots, Wood-Ear Fungus, Chinese Mushrooms And Dried Lily Buds

Ingredients :
  • 300 grammes of cabbage (cut across into 1 inch width)
  • 200 grammes of carrot (sliced)
  • 50 to 100 grammes of wood-ear fungus (soaked in water till soft)
  • 5 dried chinese mushrooms (pre-soaked in 1 large bowl of water, cut into halves and with stem removed. Keep the water for cooking)
  • 50 grammes of dried lily buds (pre-soaked till soft and knotted in the middle)
  • 4 bulbs of garlic (chopped)
  • 2 tablespoons of cooking oil
  • 1 tablespoon of corn flour (mix with 3 tablespoons of water to make starch)
Seasoning :
  • 2 teaspoons light soya sauce
  • 1 tablespoon vegetarian oyster sauce
  • Salt and white pepper powder to taste
  • 1 tablespoon chinese cooking wine
Directions :
  1. Heat oil in wok at high heat. Add garlic, chinese mushrooms and wood-ear fungus. Stir fry for 1 minute ensuring the garlic does not burn.
  2. Add carrots, dried lily buds and cabbage and continue stir frying for another 2 minutes. Add a little water (from the water used to soak mushrooms) at a time to ensure that the vegetables do not dry out.
  3. Add light soya sauce, vegetarian oyster sauce, salt and white pepper followed by 1 cup of water and let it boil with lid closed. Cook for about 3 minutes or until cabbage is slightly limp.
  4. Finally, add chinese cooking wine and adjust seasoning to taste. This is followed by the corn starch to thicken sauce to your desired thickness.

Steamed Fish Head @ Taynton View/Taman Connaught

This is an interesting hide out which I have discovered for lunch in the vicinity of Cheras. If you are coming from the city of Kuala Lumpur traveling south bound along Jalan Cheras and make your way to Taynton View/Taman Connaught, somewhere near Federal Institute of Technology also known as F.I.T. now is UCSI.


You will see or might hit these road names and watch out for this sign at a side lane in front of F.I.T. and you are about less than 50 metres near the stall.

Basically the eatery stall is situated between Taman Connaught and Taynton View. It is just at the back lanes of these two housing schemes.



The place is very crowded with patrons during lunch hours, the food is tasty and the pricing is very reasonable. Come Sundays and Saturdays it is open for business.

Good place with good food!

對眼睛有益的食物有哪些呢?

蛋白質:

蛋白質是組成人體組織的主要成分,組織的修補和更新需要不斷地補充蛋白質. 瘦肉、禽肉、動物內臟、魚、蝦、奶類、蛋類等含有豐富的動物性蛋白質,而豆類含有豐富的植物性蛋白質.

維生素A:
人體在缺乏維生素一的時候,眼睛感受弱光的能力下降,對黑暗環境的適應能力減退,嚴重時易患夜盲症. 另,缺乏維生素一可引起眼結膜乾燥,眼淚少,甚至於導致眼角膜穿孔致盲,這就是人們常說的乾眼症.

維生素A的最好來源是各種動物的肝臟、魚肝油、奶類、蛋類,以及綠色、紅色、黃色的蔬菜和橙黃色的水果,如胡蘿蔔、菠菜、韭菜、青椒、甘藍、薺菜、海帶、紫菜、橘子、柑、哈密瓜、芒果等。人體攝入足量的維生素,不僅利於消除眼睛的疲勞,還可以預防和治療夜盲症,乾眼症,黃斑性.

維生素C:
維生素C是組成眼球水晶體的成分之一,如果缺乏維生素C就容易導致水晶體渾濁患白內障. 因此,應該在每天的飲食中注意攝取含維生素C豐富的食物,維生素C含量較高的食物有:鮮棗、青菜、捲心菜、菜花、青椒、苦瓜、油菜、西紅柿、豆芽、土豆、蘿蔔、柑橘、橙、草莓、山楂、蘋果等.

鈣:豐富的鈣質對眼睛也是很多好處,鈣具有消除眼肌緊張的作用。食物中的豆及豆製品、奶類、魚、蝦、蝦皮、海帶、墨魚等水產品;乾果類的花生、核桃、蓮子;食用菌類的香菇、蘑菇、黑木耳;綠葉蔬菜中的青菜秧、芹菜、莧菜、香菜、油菜苔等含鈣量都比較豐富.

Durian Apom Balik

Ingredients :
  • 300g plain flour
  • 30g rice flour
  • 300g caster sugar
  • 1 tsp baking powder
  • 100g durian puree (optional)
  • 8 pandan leaves
  • 150ml thick coconut milk
  • 250ml water
  • 3 eggs
  • a pinch of salt
Directions :
  1. Wash and blend pandan leaves with the 250ml water and strain out the juice.
  2. Sift rice flour, plain flour, salt and baking powder into a mixing bowl.
  3. Mix sugar, eggs and durian puree with 150ml thick coconut milk. Stir till sugar dissolves.
  4. Mix sifted ingredients from (2) with 250ml pandan water to make a smooth batter. Gradually add this batter to the egg mixture. Mix well and strain mixture.
  5. Heat apom balik mould or a kwali until hot. Reduce the heat and grease slightly with oil.
  6. Pour the batter into the mould. Cook over low heat, uncovered, until bubbles appear on the top. Cover with a lid and cook until the apom balik turns golden brown. Remove from mould and fold the apom balik into half.

Oatmeal And Chocolate Cookies

Ingredients :
  • 100gm butter
  • 100gm brown sugar
  • 1 egg
  • 1/4tsp vanilla essence
  • 130gm quick cooking oats
  • 100gm self raising flour
  • 1/8tsp salt
  • 100gm chocolate chips
  • 30gm cashew nut - chopped
Directions :
  1. Place butter, sugar, egg and vanilla in a bowl and beat until creamy.
  2. Combine the rest of the ingredients in a bowl.
  3. Brush baking tray with butter and arrange tablespoons of the cookies dough on the tray, well spaced apart. Dip the base of glass or cup in flour and flatten cookies 0.5 cm thick.
  4. Bake at preheat oven 180ºc for 12-15 minutes.
